Vinification and Aging

The " Località d'Agosto " is produced exclusively in favorable years .

The grapes are harvested in 18 kg crates and only the first pressing is held ( 40% of the initial grapes ). It is then bottled , capped with the crown cap and laid down in stacks for the second fermentation .
