Lo Sparvier 's Franciacorta "Cuvée n.7" is a product of local cultivations in the provinces of Brescia , to understand its origins we need to go back to the beginning of the ninth century, when local monasteries worked attesting to the importance of viticulture, which was beginning to take hold in the economy of medieval Franciacorta .
The “ Cuvée n.7 ” is the latest wine born from the Chardonnay grapes in the Sparviere house, combining the rigor and minerality deriving from the calcareous soils with the floral exuberance and the softness of the soils.
It expresses characteristic aromas of honey, ripe fruit, dried fruit and hints of bread crust. On the palate it is sapid, mineral, fresh, soft and at the same time balanced with a long persistence.
It is a unique wine , the rigorous selection of the grapes from the vineyards owned by the company and the yields per hectare kept very low are the matrix of the organoleptic characteristics and the delicate balance that identify the wines of "Lo Sparviere".
This is the most contemporary and identifying among the sparkling wines of Lo Sparviere, an unmissable bubble .

From the vineyard, the Chardonnay grape crates are placed in a refrigeration cell which has a temperature of 4°C for 24-36 hours, the cooled grapes are taken to the press for the soft pressing of the whole bunches. The maturation of the base wine on the lees lasts about 7 months in stainless steel tanks and the draft for the second fermentation takes place in the month of May.
The "Lo Sparviere" winery was born in Monticelli Brusati , a small town between Brescia and Lake Iseo , the vineyards are located close to the first hills, just before the hills become mountains, and enjoy a soil different from the typical soil moraine of Franciacorta.
The soils of this area, unlike the soils of Franciacorta of morainic origin brought back by the melting and retreat of the glaciers, are native and made up of calcareous marls. The name of this rock formation is Lombard selciferous.
