In the beginning they were Nicolas-François Billecart and Elisabeth Salmon , both owners of vineyards who gave the grapes to various Champagne houses: in 1818 the two married and Elisabeth brought her 14 hectares of vineyards as a dowry to her husband, convincing him to start production of a champagne on his own.
Today Billecart-Salmon's Champagne Brut Réserve comes from the classic assembly of the three most important Champagne vines such as Pinot Noir , Chardonnay and Pinot Meunier from different vintages and a substantial part of Reserve Wines .
It is the Champagne that represents the history and tradition of the Maison in its most authentic and immediate expression, the nose offers an extraordinary balance between hints of fresh and ripe fruit, the taste reveals great balance and harmony , bringing an elegance and unrivaled sophistication .
Because today, after 7 generations , the great love story between the territory and the producer continues. One of the most beautiful successes of the Champagne region that should not be missed.
The Brut Réserve goes well with simple second courses of fish , molluscs and small crustaceans, but I advise you to uncork it as an aperitif together with raw fish, you'll see how great it is!
Don't forget to drink it chilled, serve at 8°-10°C .
Vinification takes place separately for each grape, in small 50-hectolitre wooden barrels, for about 3 weeks, with double decantation of the must. The Champagne ages on the lees for 36 months before disgorgement.
We are located in Mareuil-sur-Aÿ , a Premier Cru commune in the Vallée de la Marne , where the company can count on an extension of owned vineyards that covers about one hundred hectares, the Roland-Billecarts obtain supplies from a total area of 220 hectares, divided between forty different crus, among which we find some of the best vineyards of pinot noir, chardonnay and pinot meunier in the entire Champagne region, located mainly around Epernay, in the Vallée de la Marne, but also in the lands mythical of the Montagne de Reims and in the Côte des Blancs area.
The composition of the soil is mainly made up of limestone , chalk and marl . Gypsum has the property of retaining water by capillary action and its high porosity is a reservoir of water which gives the plant an adequate supply even during the driest summers.
