It comes from an aging of at least 72 months on the lees in the bottle and is expressed in a rich bouquet of candied fruit, fresh fruit , toasted notes and spices . The taste is energetic and very intense , velvety and creamy , in short, of great class.
Each bottle represents a unique and prestigious piece and no vintage is the same as another, however always confirming itself as one of the most significant and emblematic enological expressions in the world. A great effort just to create a bubble with body, complexity, structure and above all class, with an aging potential of over 30 years.
Right from the olfactory approach, the Champagne Brut Dom Perignon is intense, rich and complex, with a typical minerality in the foreground accompanied by a symphony of candied fruit, citrus fruits, honey, toasted spices and much more. On the palate it reveals an impeccable balance , played between the creamy finesse of the bubbles, the roundness of the body, the mineral freshness of the terroir and the richness of the taste, always noble and composed, never over the top.
What questions, because Dom Pérignon is Dom Perignon.
Since 1936 we have been talking about a Champagne Millesimato , produced only in the best vintages. The production today is followed and directed by the chef de cave Richard Geoffroy , considered one of the best masters in the art of assembly , while the grapes for the production come from the Grand Cru owned by the Maison, which is joined by a part of Pinot Noir grown in the Hautvillers abbey vineyards, classified as Premier Cru .
In short, it is a label of historical importance and of the highest quality level: a magic that never ceases to amaze.
Dom Pérignon is a great Champagne, synonymous with prestige, luxury and elegance, perfect for special occasions but also to make an evening UNFORGETTABLE . It perfectly accompanies fish-based dishes , both raw and cooked, and is also an excellent companion for white meats .
I advise you to let it 'breathe' at least 15/30 minutes before pouring it into the glass!

The Champagne wine region is what is called the "vineyard of hills" : the vines are mostly planted on the slopes of the hills. The sides of the coteaux offer each vine optimal sun exposure , allowing rainwater to drain away, thus facilitating water drainage.
The composition of the soil is mainly made up of limestone, chalk and marl . Gypsum has the property of retaining water by capillary action and its high porosity is a reservoir of water which gives the plant an adequate supply even during the driest summers.
