Vinification and refinement

The production of this Champagne occurs through a careful winemaking process. After a careful selection of the grapes , they are delicately pressed to obtain the base wines, which are then assembled to create the final cuvée. The grapes are vinified with only indigenous yeasts . The creation of the sparkling wine base occurs through spontaneous alcoholic fermentation in steel tanks, followed by a few months of maturation in the same type of containers. After at least 30 months of aging on the yeasts, we proceed with the disgorgement without dosage , with the addition of only wine for topping.
