So, what wine can you pair with your Easter menu?
At Easter, meat and medium-flavoured dishes dominate the table, with the necessary regional variations depending on the tradition of the area. The queen of the tables is fresh homemade pasta: cannelloni, baked pasta, lasagne with meat sauce or with vegetables, in short, it doesn't matter.
Everyone likes a first course with fresh pasta and therefore cannot be missed. The ideal is to combine red wines with little body but juicy and enveloping on the palate, much appreciated even by those who do not like red wines that are too full-bodied and structured.
To enhance any pasta, the protagonist of your main course, I chose Alberto Ballarin's Langhe Nebbiolo Doc , an intact and true wine by virtue of a minimally invasive winemaking process that makes it agile for all table occasions.
Alberto Ballarin produces this red in the heart of the Langhe, the company, family-run since 1924, is one of the most important wine-growing companies in the province of Cuneo.
This Langhe Nebbiolo Doc is characterized by the right sugar and alcohol content and good fixed acidity, which helps to enhance the aromas and maintain them over time.
In short, one of those reds to taste and talk about at the Easter table.

Now the main dish, the lamb. How do you prepare it?
The recipe you follow is essential for choosing the wine. If your idea is to cook in the oven, the dish will be characterized by the succulence of the meat, the aroma of the herbs and the bitter sensation of the browning.

Traditionally at the grill there are various types of meat, from lamb to pork, very different meats that have only one thing in common: the marinade.
It is made up of an acidic part (like lemon), a fatty part (oil or butter) and an aromatic part (rosemary, spices etc.), these elements help you in choosing the wine because you already know that the meat will be soft, fatty but above all aromatic.
To try something special, the choice is the Valpolicella Ripasso Dop “Le Morete” from Manara . The name derives from the ripasso technique which consists in restarting fermentation on the still moist pomace of Amarone, in this way the wine shows itself as a synthesis between the power of the famous Veronese wine and the versatility of the classic Valpolicella.
