How well do you know the denomination of the great bubbles of northern Italy?
On 26 June we celebrate San Vigilio, the patron saint of Trento, an opportunity to talk about the denomination that has made the wine excellences of the area famous: Trento DOC, synonymous with quality sparkling wines, produced with the classic method, a symbol of art Trentino wine production and its territorial peculiarities.
The great value of Trento DOC is its versatility, from bruts for starters of cured meats and cheeses, to rosés with mushroom risottos or canederli, up to reserves for meat dishes such as deer or roe deer.
Trento DOC wines are produced using the most suitable vine varieties for sparkling wine production: Chardonnay, Pinot Bianco, Pinot Noir and Pinot Meunier, whose harvest takes place early to ensure the right balance between sugars and acidity, essential for obtaining a high quality sparkling wine . The classic method is rigorously followed, which includes refermentation in the bottle, remuage and disgorgement. The wine must then remain on the yeasts for a minimum period of 15 months, which rises to 36 months for the "reserve" type.

But where is Trento Doc born?
The area of this denomination includes the territories of the province of Trento located in the Adige Valley, in the Cembra Valley, in the Vallagarina, in the Sarca Valley, in the Valsugana and in the Giudicarie Valleys.
This area immediately enchants the eye, approximately 800 hectares of vineyard land, mainly on slopes, reaching up to 800 meters above sea level. The production of classic method sparkling wine in Trentino has a long history, with over a century of constant progress both in the number of producers and in the quantities of bottles produced. Since 1993 it has been recognized as a denomination and was the first in Italy reserved exclusively for sparkling wines obtained with the method of refermentation in the bottle.
Many years earlier, in 1902, Ferrari was born from the intuitions of Giulio Ferrari, a great and legendary pioneer of the Classic Method who contributed to spreading Chardonnay in Italy. Today the cellar continues to represent an undisputed symbol of Made in Italy in the wine sector and to produce bubbles known and appreciated throughout the world.
The Trento DOC Ferraris are characterized by a unique and inimitable style, thanks also to the choice to convert the vineyards to organic farming, a further step of fidelity and coherence to the founder's principles. The union between a particularly suitable territory such as Trentino and work has given life to bottles of absolute value, such as the Trento DOC Maximum Blanc de Blancs .
This brut sparkling wine embodies the purity and elegance of the Chardonnay grape, has a fine-grained perlage, with excellent persistence. Its fragrant and rich aromas are unmistakable, with fruity and floral notes that evolve into yeasty nuances. In the mouth it offers a soft and velvety foam, with a mineral sip of pleasant freshness, set on a perfectly balanced texture.

This bubble comes from the vigorous vines that embrace the mountain slopes of the Cembra valley, a sublime expression of the Trentino terroir. The winery is renowned for its dedication to quality and the use of traditional methods, this Trento DOC is produced following the classic method, which involves second fermentation in the bottle, an element that contributes to its sophisticated effervescence and creamy texture.
The grapes used are Chardonnay with a small addition of Pinot Noir, harvested manually to guarantee maximum integrity of the fruit. A sparkling wine with an intriguing bouquet and a lively palate, thanks to its persistent and well-integrated bubbles, which combine harmoniously with a citric freshness and a light mineral flavor.
Ideal as an aperitif, this sparkling wine also pairs beautifully with delicate fish dishes, light appetizers and can excellently accompany an entire meal. In short, a fantastic way to discover an exceptional Trento DOC, which stands out from its colleagues in the denomination.
