Zanotto col fondo is a wine that comes from the heart of the Prosecco di Conegliano-Valdobbiadene area and is produced only in the hills of the upper province of Treviso between 150 and 350 m above sea level: it is here that Riccardo Zanotto has given life to its cellar and its incredible wines .
The sparkling white refermented in the bottle "Col Fondo" is the traditional wine par excellence : made with white berried grapes it is the oldest version of the current Prosecco , because it is produced with a bottling with sugars and yeasts and then fermented in the bottle.
It is a dry, light and savory wine , characterized by a citrusy, fruity and slightly aromatic profile, accompanied by a lively and lively froth: in the glass it is straw yellow, with a slight haze and a light and delicate effervescence. The bouquet offers aromas of orange blossom and white flowers, citrus fruits, white pulp fruit and hints of yeast. The sip is dry and savory, with a very fresh finish.
The wine can be tasted clear, leaving the deposit on the bottom, or by inverting the bottle before opening, bringing the yeasts into suspension.
Because Riccardo Zanotto, when he started marketing wine in 2009, set himself among the objectives to remain faithful to the customs of the territory and we can say that he succeeded in a great way.
