Description

This Barbaresco Docg from the Ronchi farm , which since 1996 bears the name of one of the most prestigious Geographical Mentions of Barbaresco created at the end of the nineteenth century , is of an intense garnet red color , with subtle orange reflections .

Its perfume is intense , persistent and elegant with fruity hints of raspberry , cherry and strawberry , plum jam ; other more evolved ones follow later such as tobacco and hay , cinnamon , pepper , vanilla and mentholated .

In the mouth it is full , dry , ample and full- bodied , with a well-integrated tannin texture , warm and persistent .

Vinification and Aging

Between the end of September and the beginning of October the grapes are harvested by hand . The vinification begins with the de- stemming and soft pressing of the bunches . Fermentation takes place at a controlled temperature around 28-30 ° C in steel containers . Maceration with the skins lasts for 12-15 days . The aging takes place partly in barrique and partly in large barrels for 24 months followed by bottling in the summer of the third year after the harvest. An adequate refinement in the bottle follows.
